Ingredients

  • 5 lb. leg of lamb
  • 1 lemon
  • 1/2 stick butter
  • 1 c. water
  • 2 cloves garlic, minced
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • small potatoes

Method

  • Wash meat and set aside in roasting pan.
  • In a small bowl, mix salt, pepper and minced garlic,
  • Cut incisions into leg of lamb with a sharp knife.
  • Into incisions, place seasoning mixture and a little butter.
  • Spread soft butter over leg, rubbing in rest of seasonings.
  • Pour juice of lemon over meat in pan.
  • Cook, covered, at 350° for 1 hour.
  • Add water to pan drippings and baste often until brown and tender.
  • Add small potatoes and continue to baste. Uncover last 1/2 hour to crisp skin of roast.
