Ingredients
- 5 lb. leg of lamb
- 1 lemon
- 1/2 stick butter
- 1 c. water
- 2 cloves garlic, minced
- 1 tsp. salt
- 1/2 tsp. pepper
- small potatoes
Method
- Wash meat and set aside in roasting pan.
- In a small bowl, mix salt, pepper and minced garlic,
- Cut incisions into leg of lamb with a sharp knife.
- Into incisions, place seasoning mixture and a little butter.
- Spread soft butter over leg, rubbing in rest of seasonings.
- Pour juice of lemon over meat in pan.
- Cook, covered, at 350° for 1 hour.
- Add water to pan drippings and baste often until brown and tender.
- Add small potatoes and continue to baste. Uncover last 1/2 hour to crisp skin of roast.
