Ingredients
- Allow one large fig or two small ones per person.
- gorgonzola
Method
Make two cuts at the top of each fig at right angles to each other, about 2cm deep. Peel back the skin and flesh so there is a "pocket" created in the centre of each fig. Take 2 tsp of gorgonzola and fill each pocket. Place the figs upright in a baking dish and roast in a pre-heated 170C oven for 15 minutes or until the gorgonzola has melted.
To serve
Serve as a first course with a rocket salad or as a cheese course with sweet white wine such as a botrytis semillon or riesling.
