Ingredients

  • 3 lb. chicken
  • 1 bay leaf
  • 1/2 tsp. dry thyme
  • 1 clove garlic
  • 1 onion, cut in chunks
  • 2 Tbsp. margarine
  • 1 c. chicken broth
  • olive oil

Method

  • Wash and dry chicken.
  • Place the bay leaf, thyme and garlic in the cavity of the chicken.
  • Sprinkle with salt and pepper and then truss.
  • Place chicken in roasting pan; scatter onion chunks around it.
  • Rub with olive oil.
  • Place the chicken on its side and bake for 20 minutes.
  • Occasionally, pour off fat.
  • Place chicken on its back.
  • Add margarine and chicken broth and roast 20 minutes longer, continuing to baste.
  • It is done when juice is clear.
