Ingredients
- 3 lb. chicken
- 1 bay leaf
- 1/2 tsp. dry thyme
- 1 clove garlic
- 1 onion, cut in chunks
- 2 Tbsp. margarine
- 1 c. chicken broth
- olive oil
Method
- Wash and dry chicken.
- Place the bay leaf, thyme and garlic in the cavity of the chicken.
- Sprinkle with salt and pepper and then truss.
- Place chicken in roasting pan; scatter onion chunks around it.
- Rub with olive oil.
- Place the chicken on its side and bake for 20 minutes.
- Occasionally, pour off fat.
- Place chicken on its back.
- Add margarine and chicken broth and roast 20 minutes longer, continuing to baste.
- It is done when juice is clear.
