Ingredients

  • 3 oz. salad oil
  • 1 oz. garlic, minced
  • 3 oz. cooked ham, diced fine
  • 1 qt. chicken stock
  • 1 tsp. white pepper
  • 1/4 c. pimentos, diced
  • 1 oz. onion, chopped
  • 1 lb. rice
  • 1 bay leaf
  • 1 tsp. salt
  • 1/2 c. green peas, cooked
  • 1/2 c. mushrooms, cooked and diced

Method

  • Saute onion and garlic in oil until lightly browned.
  • Stir in rice, ham and bay leaf.
  • Saute about 5 minutes, stirring often. Combine rice mixture with stock, salt and pepper; stir well. Bring to a boil.
  • Cover tightly.
  • Bake at 350° for 20 to 25 minutes, or until rice is done.
  • Remove bay leaf.
  • Heat peas, pimentos and mushrooms.
  • Add to rice; toss lightly with fork to combine.
  • Cover and heat for 3 to 4 minutes longer.
