Ingredients

  • 1 lb pizza dough
  • 1/3 cup extra virgin olive oil
  • 4 cloves garlic, crushed
  • 6 oz goat cheese, crumbled
  • 1 cup ricotta cheese
  • 6 oz baby arugula leaves

Method

  • Preheat the oven to 450°F. Grease 2 pizza pans or baking sheets. Halve dough and roll out each piece to a 13 x 9-inch rectangle. Place on pans.
  • Brush pizzas with 1 tbsp oil. Combine garlic and goat cheese in a bowl. Crumble over pizzas. Top with ricotta. Season and drizzle each with 1 tbsp oil.
  • Bake for 15 mins, swapping pans halfway through cooking, until pizza is browned and bottom is crisp. Top with arugula and drizzle with remaining oil.
