Ingredients

  • 1 box Uncle Ben's wild rice
  • 1 lb. hot sausage
  • 1 medium onion, finely chopped
  • 1 clove garlic, crushed
  • 2 cans cream of mushroom soup
  • 1 small jar pimentos, chopped
  • 1 can water chestnuts, drained and sliced thin
  • 1/2 c. slivered almonds
  • 1/2 stick butter
  • 1/4 lb. Ritz crackers
  • 1 stick butter, melted

Method

  • Cook rice according to directions on box.
  • Brown almonds in 1/2 stick butter.
  • Brown together sausage, onion and garlic.
  • Mix rice and sausage, while hot, with other ingredients, except crackers and 1 stick of butter.
  • Place in a 2-quart casserole dish.
  • Crush Ritz crackers.
  • Toss with 1 stick melted butter. Sprinkle over top.
  • Bake for 25 to 30 minutes at 350° until bubbly and crackers are browned.
