Ingredients
- 2 c. hot water
- 1 1/2 c. sugar
- 1 (12 oz.) can evaporated milk
- 4 eggs, beaten
- 1 c. coconut
- 1/2 c. raisins
- 1/3 c. oleo
- 1 tsp. vanilla
- 1/2 tsp. nutmeg
- 4 c. cooked rice
Method
- Combine water and sugar; stir until sugar dissolves. Add milk and eggs. Stir in coconut and next 5 ingredients. Add rice and let stand for 30 minutes. Pour into a 9 x 13 pan and bake at 350° for 45 minutes. Serves 10 to 12.
