Ingredients

  • 1/2 c. rice
  • 1/2 c. water (enough to cover rice)
  • 1 Tbsp. butter
  • 1/4 tsp. salt
  • 2 1/2 c. milk
  • 1/3 c. sugar
  • 2 eggs
  • 1/2 tsp. vanilla
  • 1 tsp. cornstarch (optional)

Method

  • Cover rice with water and boil until water is gone.
  • Add milk, sugar, salt and butter and simmer until rice is cooked.
  • Beat eggs along with 1 tablespoon milk and cornstarch, then stir a little of the hot mixture into them.
  • Add slowly to keep eggs from curdling. Pour egg mixture into milk and rice.
  • Stir until well blended. Add vanilla.
  • Pour into serving dishes and sprinkle with cinnamon. Can be served hot.
