Ingredients

  • 1/2 c. chopped onions
  • 3 Tbsp. butter
  • 4 c. cooked rice
  • 1 small jalapeno pepper, finely ground (optional)
  • 1 3/4 c. sour cream
  • 1/2 lb. cottage cheese
  • 1/2 lb. grated Longhorn cheese
  • 1/2 bay leaf, crumbled
  • 1 can whole Ortega chili peppers, halved
  • salt and pepper to taste

Method

  • Saute onions in butter until light brown.
  • Add the cooked rice, jalapeno (if used), the cottage cheese, Longhorn cheese and crumbled bay leaf.
  • Alternate layers of rice mixture with strips of the chili peppers to form 4 layers in a greased casserole. Bake in a 375° oven for 25 minutes.
  • Top with 1/2 cup grated Longhorn cheese.
  • Bake for 10 minutes more.
  • Serves 10.
