- 1/2 c. chopped onions
- 3 Tbsp. butter
- 4 c. cooked rice
- 1 small jalapeno pepper, finely ground (optional)
- 1 3/4 c. sour cream
- 1/2 lb. cottage cheese
- 1/2 lb. grated Longhorn cheese
- 1/2 bay leaf, crumbled
- 1 can whole Ortega chili peppers, halved
- salt and pepper to taste
Method
- Saute onions in butter until light brown.
- Add the cooked rice, jalapeno (if used), the cottage cheese, Longhorn cheese and crumbled bay leaf.
- Alternate layers of rice mixture with strips of the chili peppers to form 4 layers in a greased casserole. Bake in a 375° oven for 25 minutes.
- Top with 1/2 cup grated Longhorn cheese.
- Bake for 10 minutes more.
- Serves 10.
