Ingredients

  • 1 Tbsp. margarine
  • 1 green pepper, chopped
  • 1/2 c. sliced, pitted, ripe olives
  • 1 envelope Italian style dressing mix
  • 1 bag Success 10-Minute brown rice, cooked
  • 1 c. shredded pack skim Mozzarella cheese
  • 1 garlic clove, minced
  • 1 can Italian style tomatoes

Method

  • Cook and stir pepper and garlic in margarine until tender. Add tomatoes and salad dressing.
  • Simmer 10 minutes.
  • Stir in rice and top with cheese.
  • Sprinkle with olives.
  • Serves 4.
