- 1 Tbsp. margarine
- 1 green pepper, chopped
- 1/2 c. sliced, pitted, ripe olives
- 1 envelope Italian style dressing mix
- 1 bag Success 10-Minute brown rice, cooked
- 1 c. shredded pack skim Mozzarella cheese
- 1 garlic clove, minced
- 1 can Italian style tomatoes
Method
- Cook and stir pepper and garlic in margarine until tender. Add tomatoes and salad dressing.
- Simmer 10 minutes.
- Stir in rice and top with cheese.
- Sprinkle with olives.
- Serves 4.
