Ingredients
- 2 c. rich homemade chicken stock or Swanson's jarred chicken broth
- 1 c. long grain white rice
- 4 c. thinly sliced zucchini
- 2 or 3 Tbsp. butter or margarine
Method
- Cook rice using the chicken broth for liquid.
- Saute the sliced zucchini in the butter or margarine.
- Combine the zucchini and rice.
- Season with salt and pepper.
- Serve.
- You may vary amounts used depending upon the number of people being served.
