Ingredients
- 2 c. rhubarb, cut in small pieces
- 1/2 c. sugar
- 1/4 c. water
- 1 small pkg. strawberry jello
- 1 c. boiling water
- 2 Tbsp. crushed drained pineapple
- 2 small apples, chopped
- 1/4 c. walnut meats, chopped
Method
- Combine rhubarb, sugar and 1/4 cup water.
- Bring to rolling boil; reduce heat and simmer for about 5 minutes.
- Remove from heat.
- Let stand, covered, until partially cooled.
- Dissolve jello in 1 cup boiling water.
- Stir and blend in rhubarb mixture.
- Chill until thickened but not set.
- Fold in the pineapple, apple and nuts.
- Chill until set.
- Can be frozen.
