Ingredients
- 1 (9-inch) unbaked pie shell
- 2 c. sugar
- 3 Tbsp. all-purpose flour
- 1/4 tsp. salt
- 3 Tbsp. butter or margarine
- 3 eggs, separated
- 3 c. fresh rhubarb
Method
- Combine 1 1/2 cups sugar with flour, salt, butter and egg yolks.
- Beat well.
- Beat egg whites until stiff, adding 1/2 cup sugar.
- Fold into egg yolk mixture; fold in rhubarb.
- Pour into unbaked pie shell.
- Bake in preheated oven at 400° for 10 minutes, reduce heat to 325° and bake 40 to 50 minutes.
