Ingredients

  • 1 c. flour
  • 1 c. packed brown sugar
  • 3/4 c. oatmeal
  • 1/2 c. butter, melted
  • 4 to 5 c. sliced raw rhubarb
  • 1 c. sugar
  • 1 c. cold water
  • 2 Tbsp. cornstarch
  • 1 tsp. vanilla

Method

  • In bowl, mix flour, brown sugar, oatmeal and butter.
  • Press 3/4 of mixture into bottom of 9 x 9-inch pan.
  • Cover with rhubarb.
  • In saucepan, mix all remaining ingredients.
  • Cook over medium heat, stirring constantly until thickened.
  • Pour over the rhubarb. Sprinkle remaining flour/oatmeal mixture on top.
  • Bake at 350° for 45 to 60 minutes until bubbly and brown.
  • Cool.
  • Yields 12 servings.
