Ingredients
- 1 c. flour
- 1 c. packed brown sugar
- 3/4 c. oatmeal
- 1/2 c. butter, melted
- 4 to 5 c. sliced raw rhubarb
- 1 c. sugar
- 1 c. cold water
- 2 Tbsp. cornstarch
- 1 tsp. vanilla
Method
- In bowl, mix flour, brown sugar, oatmeal and butter.
- Press 3/4 of mixture into bottom of 9 x 9-inch pan.
- Cover with rhubarb.
- In saucepan, mix all remaining ingredients.
- Cook over medium heat, stirring constantly until thickened.
- Pour over the rhubarb. Sprinkle remaining flour/oatmeal mixture on top.
- Bake at 350° for 45 to 60 minutes until bubbly and brown.
- Cool.
- Yields 12 servings.
