Ingredients
- 1/2 c. butter
- 1 1/2 c. brown sugar
- 1 egg
- 2 c. flour, sifted
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 c. buttermilk
- 1 1/2 c. finely chopped rhubarb
- 1/4 c. sugar
- 1 tsp. cinnamon
Method
- Cream butter and brown sugar together.
- Beat in egg.
- Sift flour, salt and soda; add to creamed mixture alternately with the buttermilk.
- Fold in rhubarb.
- Pour into greased 13 x 9-inch pan. Mix sugar and cinnamon together; sprinkle over batter.
- Bake at 350° for 30 minutes, or until browned.
