Ingredients

  • 1/2 c. butter
  • 1 1/2 c. brown sugar
  • 1 egg
  • 2 c. flour, sifted
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 c. buttermilk
  • 1 1/2 c. finely chopped rhubarb
  • 1/4 c. sugar
  • 1 tsp. cinnamon

Method

  • Cream butter and brown sugar together.
  • Beat in egg.
  • Sift flour, salt and soda; add to creamed mixture alternately with the buttermilk.
  • Fold in rhubarb.
  • Pour into greased 13 x 9-inch pan. Mix sugar and cinnamon together; sprinkle over batter.
  • Bake at 350° for 30 minutes, or until browned.
