Ingredients

  • 1 1/2 cups sugar
  • 1 teaspoon salt
  • 2/3 cup oil
  • 1 egg
  • 1 cup sour milk (1 cup milk, 1 tablespoon lemon juice)
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla
  • 2 1/2 cups flour
  • 2 1/2 cups raw rhubarb, sliced into 1/2 inch pieces
  • Topping:
  • 1/2 cup sugar
  • 1 tablespoon butter or margarine, melted

Method

  • Preheat oven to 325 degrees.
  • Mix all ingredients except rhubarb and beat well. Fold in sliced rhubarb last.
  • Put into two greased 9x9 pans or one 9x13 pan. Spread topping over all. Bake at 325 degrees for 40 minutes, until nicely browned. Do not overbake.
