Ingredients
- 1 1/2 cups sugar
- 1 teaspoon salt
- 2/3 cup oil
- 1 egg
- 1 cup sour milk (1 cup milk, 1 tablespoon lemon juice)
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla
- 2 1/2 cups flour
- 2 1/2 cups raw rhubarb, sliced into 1/2 inch pieces
- Topping:
- 1/2 cup sugar
- 1 tablespoon butter or margarine, melted
Method
- Preheat oven to 325 degrees.
- Mix all ingredients except rhubarb and beat well. Fold in sliced rhubarb last.
- Put into two greased 9x9 pans or one 9x13 pan. Spread topping over all. Bake at 325 degrees for 40 minutes, until nicely browned. Do not overbake.
