Ingredients

  • 3 Tbsp. margarine
  • 1/4 c. chopped onion
  • 1/2 c. chopped celery
  • 1 Tbsp. flour
  • 1/4 c. cream
  • 1 egg
  • 1 Tbsp. diced carrots
  • 3 c. green peas
  • 1 egg yolk

Method

  • Scramble in 3 tablespoons margarine 1 egg and cook well.
  • Add onion, carrots and celery, stir over fire for a few minutes.
  • Add green peas, barely cover with water and cook until the vegetables are firmly tender.
  • Drain off the liquid and return it to the stove.
  • While it is coming to a boil, mix 1 tablespoon flour, 1 egg yolk and 1/4 cup cream.
  • Add the hot broth to the flour mixture, stir well and bring to a boil.
  • Add vegetable mixture.
