Ingredients
- 3 Tbsp. margarine
- 1/4 c. chopped onion
- 1/2 c. chopped celery
- 1 Tbsp. flour
- 1/4 c. cream
- 1 egg
- 1 Tbsp. diced carrots
- 3 c. green peas
- 1 egg yolk
Method
- Scramble in 3 tablespoons margarine 1 egg and cook well.
- Add onion, carrots and celery, stir over fire for a few minutes.
- Add green peas, barely cover with water and cook until the vegetables are firmly tender.
- Drain off the liquid and return it to the stove.
- While it is coming to a boil, mix 1 tablespoon flour, 1 egg yolk and 1/4 cup cream.
- Add the hot broth to the flour mixture, stir well and bring to a boil.
- Add vegetable mixture.
