Ingredients
- 2 c dry black, pinto, or red kidney beans
- 1 onion, finely chopped
- 1 clove garlic, finely chopped
- 1 bay leaf
- 2 T oil plus extra
- 2 tsp salt
- Optional - 2 serrano chiles, seeded and chopped
Method
- Pick over beans but do not soak. Put in a pot with water to cover plus onions and garlic, bay leaf, and chiles (if using).
- Bring to a boil, reduce to simmer and cover. When beans "wrinkle" (about 20 minutes), stir in 2 T oil and continue to simmer.
- You may have to add boiling water to keep beans just covered. Simmer until soft - 1 1/2 hours.
- Add salt and simmer 30 minutes.
- In heavy fry pan, heat 2 T oil. Gradually mash in beans and add more oil (up to 4 T) as needed.
