Ingredients

  • 2 tomatoes, diced
  • 1 green bell pepper, diced
  • 1 medium onion, diced
  • 2 to 3 cloves garlic, minced
  • 2 to 3 jalapeno peppers
  • 2 Tbsp. minced cilantro
  • 1 tsp. lime juice
  • 1 tsp. ground cumin
  • 1 tsp. dried oregano
  • 1/4 tsp. black pepper
  • 1/4 tsp. salt
  • 1/4 ground cayenne pepper
  • 2 c. canned crushed tomatoes

Method

  • Combine all ingredients except crushed tomatoes in a large bowl; mix well.
  • Place about 3/4 mixture in a food processor, fitted with steel blade, and process for about 5 seconds.
  • Return to bowl with remaining salsa mixture.
  • Add crushed tomatoes and mix well.
  • Cover tightly and allow to chill at least 1 hour before serving.
  • Makes about 4 cups.
