Ingredients

  • 1/2 lb. salmon fillet
  • 1 teaspoon Olive oil
  • 1 tablespoon lemon juice
  • salt and pepper
  • 4 cups torn Romaine lettuce
  • 1/4 sweet red pepper, chopped
  • 1/4 sweet yellow pepper, chopped
  • 1/2 cup grape tomatoes
  • 1/2 cup red seedless grapes
  • 1 6" zucchini, sliced
  • 1 small carrot
  • 2 Tablespoons Franks Original RedHot Sauce
  • 2 Tablespoons lemon juice
  • 1 Tablespoon virgin olive oil
  • 1 Tablespoon flaxseed oil

Method

  • Season salmon with lemon juice, salt and pepper. Drizzle olive oil over salmon. Grill just until it flakes, about 4 minutes on each side. Combine lettuce, peppers, tomatoes, grapes & zucchini in large salad bowl. Lightly toss with 1/4 teaspoon of Kosher salt, fresh ground pepper and 1/4 teaspoon of sugar. Using short strokes with a vegetable peeler, slice down the carrot over the salad. Lay the salmon on top and drizzle dressing over all. For dressing: combine hot sauce, lemon juice and oils in lidded container. Shake vigorously.
