Ingredients

  • 1 shallot, minced
  • 3 tbsp. olive oil
  • 3 tbsp. sherry vinegar
  • 1 tbsp. honey
  • 2 large beets, peeled
  • 4 stalks celery, thinly sliced
  • 3 cu. baby spinach leaves, tightly packed
  • 1 large, ripe avacado, diced
  • 3 tbsp. toasted sunflower seeds
  • salt & pepper

Method

  • In large bowl, wisk together shallots,oil, vinegar, & honey with salt & pepper.
  • Grate the beets and toss them in the dressing.
  • Add the spinach and celery, and toss well.
  • Fold in the avacado, them taste and adjust seasoning.
  • Sprinkle sunflower seeds on top.
  • Let sit for 1 hr.
  • Serve.
