- 1 shallot, minced
- 3 tbsp. olive oil
- 3 tbsp. sherry vinegar
- 1 tbsp. honey
- 2 large beets, peeled
- 4 stalks celery, thinly sliced
- 3 cu. baby spinach leaves, tightly packed
- 1 large, ripe avacado, diced
- 3 tbsp. toasted sunflower seeds
- salt & pepper
Method
- In large bowl, wisk together shallots,oil, vinegar, & honey with salt & pepper.
- Grate the beets and toss them in the dressing.
- Add the spinach and celery, and toss well.
- Fold in the avacado, them taste and adjust seasoning.
- Sprinkle sunflower seeds on top.
- Let sit for 1 hr.
- Serve.
