- 2 Tablespoons Olive Oil
- 1 whole Medium Zucchini, Cubed
- 1 whole Medium Summer Squash, Cubed
- 1 whole Onion, Sliced
- 1 whole Bell Pepper, Chopped
- 1 whole Medium Eggplant, Cubed
- 2 teaspoons Minced Garlic
- 1 whole Tomato, Chopped
- 1 teaspoon Oregano
- 1 teaspoon Basil
- 1/4 teaspoons Salt
- 1/4 teaspoons Ground Pepper
- Parmesan Cheese, To Serve
Method
- Heat olive oil in a skillet over medium heat and saute the zucchini and squash for 5 minutes.
- Then add the onion, bell pepper, eggplant and garlic and cook for a few minutes, adding more oil if needed.
- Stir in tomatoes, oregano, basil, salt and pepper and reduce the heat to low.
- Cook for 45-60 minutes for optimal flavor.
- Top with Parmesan cheese.
