Ingredients

  • 2 Tablespoons Olive Oil
  • 1 whole Medium Zucchini, Cubed
  • 1 whole Medium Summer Squash, Cubed
  • 1 whole Onion, Sliced
  • 1 whole Bell Pepper, Chopped
  • 1 whole Medium Eggplant, Cubed
  • 2 teaspoons Minced Garlic
  • 1 whole Tomato, Chopped
  • 1 teaspoon Oregano
  • 1 teaspoon Basil
  • 1/4 teaspoons Salt
  • 1/4 teaspoons Ground Pepper
  • Parmesan Cheese, To Serve

Method

  • Heat olive oil in a skillet over medium heat and saute the zucchini and squash for 5 minutes.
  • Then add the onion, bell pepper, eggplant and garlic and cook for a few minutes, adding more oil if needed.
  • Stir in tomatoes, oregano, basil, salt and pepper and reduce the heat to low.
  • Cook for 45-60 minutes for optimal flavor.
  • Top with Parmesan cheese.
