Ingredients
- 3/4 c. Crisco
- 1/4 c. sugar
- 1/4 tsp. salt
- 1/4 tsp. almond extract
- 2 eggs, separated
- 1 1/2 c. flour
- 1 c. red raspberry preserves
- 1/2 c. coconut
- 1/2 c. sugar
Method
- Preheat oven to 350°.
- Cream the first 4 ingredients.
- Add yolks and mix.
- Mix in flour.
- Pat into bottom of oblong pan. Bake for 15 minutes.
- Spread hot crust with preserves; top with coconut.
- Beat whites until foamy.
- Add sugar; beat until stiff peaks form.
- Spread over coconut.
- Bake for 25 minutes.
- Makes 2 dozen bars.
