Ingredients

  • 1 1/4 c. all-purpose flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 c. margarine
  • 1/3 c. granulated sugar
  • 1/2 c. packed brown sugar
  • 1 egg
  • 1 tsp. vanilla
  • 2 c. crisp rice cereal
  • 1 (3 1/2 oz.) can coconut
  • 1 c. pitted dates, chopped, or 1 c. raisins

Method

  • Set oven to 375°.
  • Stir together flour, baking powder, baking soda and salt.
  • In bowl, beat butter for 30 seconds.
  • Add sugars; beat until fluffy.
  • Add egg and vanilla; beat well.
  • Add dry ingredients to beaten mixture; beat until well mixed.
  • Stir in cereal, coconut and fruit.
  • Drop by teaspoon, 2 inches apart, onto ungreased cookie sheet.
  • Bake at 375° for 8 to 10 minutes.
  • Cool 1 minute before removing to wire rack.
  • Makes 48.
