Ingredients

  • 1 1/4 c. water
  • 2 c. raisins
  • 1/3 c. oil
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 2 eggs, well beaten
  • 2 Tbsp. water
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 2 c. flour
  • 1 tsp. baking powder
  • 4 packets sugar substitute
  • 1/2 c. chopped walnuts

Method

  • In saucepan, cook raisins, 1 1/4 cups water, oil, cinnamon and nutmeg for 3 minutes.
  • Cool to room temperature.
  • Dissolve salt in 2 tablespoons water.
  • Add eggs.
  • Add to cooled mixture.
  • Mix flour, baking powder and sugar substitute together.
  • Add dry ingredients to mixture.
  • Stir in walnuts.
  • Bake at 375° on greased cookie sheet until golden brown.
  • Serves 16 (2 cookies per serving).
