- 1 1/4 c. water
- 2 c. raisins
- 1/3 c. oil
- 2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 2 eggs, well beaten
- 2 Tbsp. water
- 1 tsp. baking soda
- 1/4 tsp. salt
- 2 c. flour
- 1 tsp. baking powder
- 4 packets sugar substitute
- 1/2 c. chopped walnuts
Method
- In saucepan, cook raisins, 1 1/4 cups water, oil, cinnamon and nutmeg for 3 minutes.
- Cool to room temperature.
- Dissolve salt in 2 tablespoons water.
- Add eggs.
- Add to cooled mixture.
- Mix flour, baking powder and sugar substitute together.
- Add dry ingredients to mixture.
- Stir in walnuts.
- Bake at 375° on greased cookie sheet until golden brown.
- Serves 16 (2 cookies per serving).
