Ingredients
- 1 lb. seedless raisins, washed
- 2 c. water
- 1 c. shortening
- 2 c. sugar
- 4 c. flour
- 1 c. coffee
- 2 tsp. baking soda
- 1/4 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. cloves
Method
- Simmer raisins and water 10 to 15 minutes; allow to cool. Cream shortening and sugar.
- Add cooled raisins and mix.
- Add dry ingredients alternating with coffee; mix well.
- Pour into greased and floured tube pan.
- Bake at 325° for 1 hour or until tester comes out clean.
- Cool in pan about 10 minutes, then invert to plate or rack.
- When cooled, sprinkle with powdered sugar or drizzle with thin icing or serve plain.
