Ingredients

  • 1 lb. seedless raisins, washed
  • 2 c. water
  • 1 c. shortening
  • 2 c. sugar
  • 4 c. flour
  • 1 c. coffee
  • 2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. cloves

Method

  • Simmer raisins and water 10 to 15 minutes; allow to cool. Cream shortening and sugar.
  • Add cooled raisins and mix.
  • Add dry ingredients alternating with coffee; mix well.
  • Pour into greased and floured tube pan.
  • Bake at 325° for 1 hour or until tester comes out clean.
  • Cool in pan about 10 minutes, then invert to plate or rack.
  • When cooled, sprinkle with powdered sugar or drizzle with thin icing or serve plain.
