Ingredients
- 3 c. flour
- 3 1/2 tsp. baking powder
- non-nutritive sweetener equivalent to 3/4 c. sugar
- 1/2 tsp. salt
- 1/3 c. diet margarine
- 2 tsp. orange peel, grated
- 2 eggs
- 1 c. nonfat milk
- 1 c. white raisins, chopped
- 1/2 c. nuts, chopped fine
Method
- Preheat oven to 350°.
- Sift dry ingredients; add margarine, orange peel, eggs and nonfat milk.
- Mix until blended.
- Stir in nuts and raisins.
- Place in well-greased loaf pan (9 x 5 x 3-inch).
- Bake 1 hour and 15 minutes or until loaf tests done. Remove from pan and store 12 hours before slicing.
