Ingredients

  • 1 Bunch of Radish washed.
  • 1 Ridge Cucumber or half a large Cucumber
  • 100-140g Feta Cheese
  • A hand full of Fresh mint leaves the small tips if possible.
  • A hand full of Chives or Chive flowers (I used welsh onion flowers)
  • 2 small immature chiles thinly sliced, or a small mild green or red chilli very finely chopped.
  • 5 Tablespoons Olive Oil
  • 1-2 Tablespoons lemon juice (maybe less maybe more depends on the lemon).
  • Salt to taste.

Method

  • 1. Top and tail the radish cut them in half then slice thinly.
  • 2. Peal the cucumber leaving as much of the green underneath the skin as possible. Cut in half lengthways, scoop out the seeds and slice, not to thin but not to chunky!
  • 3. Slice you Feta into good size pieces about 4-5cm square and 1/2cm thick.
  • 4. Very finely slice the little chillies into rings or very finely dice if the chillies are larger.
  • 5. Finely chop the chives or separate the chive/onion flowers into small pieces.
  • 6. Whisk together the olive oil with the lemon juice adding just a tablespoon of the juice then add as much more as you need, season with salt (remembering that Feta is quite salty).
  • 7. Gently combine the cucumber and radishes and arrange on your serving plate, scatter the small mint leaves, and chopped chives or flowers over the salad.
  • 8. Lay your slices of feta on top sprinkle the chillies on top of the feta then drizzle some of the dressing over the Feta and the rest of the salad.
