Ingredients

  • 5 tbsp of extra virgin olive oil
  • 1 rabbit, cut into pieces
  • 6 bay leaves
  • salt and pepper

Method

This simple recipe is from The Silver Spoon (Phaidon).

Heat 5 tbsp of extra virgin olive oil in a pan, add a rabbit cut into pieces (see previous recipe) and 6 bay leaves. Cook over medium heat for a few minutes.

Lower the heat, cover and cook, turning the meat occasionally, for 1 hour.

Season with salt and pepper, cook for 1 minute more and then serve.
