Ingredients
- 1 Tbsp. vegetable oil
- 1 c. sliced mushrooms
- 1/2 c. finely chopped onion
- 2 c. diced, cooked turkey
- 2 c. diced, cooked potatoes
- 1 Tbsp. snipped parsley
- 1 tsp. salt
- 1/8 tsp. black pepper
- 2/3 c. undiluted skim evaporated milk
Method
- Heat oil in a large saucepan on medium heat. Add mushrooms and onion. Saute about 5 minutes.
- Remove from heat. Stir in turkey, potatoes, parsley, salt and pepper.
- Stir in evaporated milk. Reduce heat to low.
- Heat mixture thoroughly (about 5 minutes). Makes 6 servings.
