Ingredients

  • 1 Tbsp. vegetable oil
  • 1 c. sliced mushrooms
  • 1/2 c. finely chopped onion
  • 2 c. diced, cooked turkey
  • 2 c. diced, cooked potatoes
  • 1 Tbsp. snipped parsley
  • 1 tsp. salt
  • 1/8 tsp. black pepper
  • 2/3 c. undiluted skim evaporated milk

Method

  • Heat oil in a large saucepan on medium heat. Add mushrooms and onion. Saute about 5 minutes.
  • Remove from heat. Stir in turkey, potatoes, parsley, salt and pepper.
  • Stir in evaporated milk. Reduce heat to low.
  • Heat mixture thoroughly (about 5 minutes). Makes 6 servings.
