Ingredients

  • 1-1/4 cups cooked chicken, cut up
  • 1 tomato, chopped
  • 3/4 cup frozen peas
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp. Italian herb seasoning
  • 1-1/4 cups reduced fat buttermilk baking mix
  • 1 cup skim milk
  • 2 eggs
  • 2 cups purchased pizza sauce, heated

Method

  • Preheat oven to 400°F. Combine first 5 ingredients in a well greased 9 inch pie plate. Combine baking mix, milk and eggs in a bowl and stir with a fork until smooth. Pour over chicken mixture. Bake 35 minutes or until knife inserted in center comes out clean. Serve with heated pizza sauce, if desired.
