Ingredients

  • 3/4 C shredded swiss or gruyere (3 Ounces)
  • 1 small onion chopped (scallions)
  • 3/4 C sauteed sliced mushrooms
  • 3 eggs beaten 5 if doubling
  • 1 C half and half 1 1/2
  • 2 T flour 3
  • 1/2 t salt 1
  • 1/4 C shredded cheddar (2 Ounces)

Method

  • Preheat oven to 400 degrees, prick pastry shell with fork and pre-bake 10 min. Lower temp to 350 and sprinkle shell with swiss and mushrooms, pour in egg mixture, sprinkle with cheddar, bake for 40 min. If using a convection oven lower temp to 325 and bake for 25-30 minutes. Let stand for 10 before serving.
