Ingredients

  • 24 graham crackers, crushed
  • 1/3 c. sugar
  • 1/2 c. butter
  • 2 eggs, beaten
  • 3/4 c. sugar
  • 8 oz. cream cheese
  • 2 c. pumpkin
  • 3 egg yolks
  • 1/2 c. sugar
  • 1/2 c. milk
  • 1/2 tsp. salt
  • 1 Tbsp. cinnamon
  • 1 envelope plain gelatin
  • 1/4 c. cold water
  • 3 egg whites
  • 1/4 c. sugar
  • 1/2 pt. whipping cream

Method

  • Mix graham crackers, 1/3 cup sugar and butter; press into 9 x 13-inch pan. Mix eggs, 3/4 cup sugar and cream cheese; pour over crust. Bake 20 minutes at 350°. Cook pumpkin, egg yolks, 1/2 cup sugar, milk, salt and cinnamon until mixture thickens. Remove from heat and add gelatin, dissolved in cold water. Cool. Beat egg whites and 1/4 cup sugar; fold in pumpkin mixture. Pour over cooled baked crust. Top with whipped cream.
