Ingredients

  • 3 eggs
  • 1 c. white sugar
  • 2/3 c. pumpkin
  • 1 tsp. lemon juice
  • 3/4 c. flour
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 tsp. nutmeg

Method

  • Beat eggs at high speed for 5 minutes.
  • Gradually beat in sugar until blended well.
  • Stir in, not using mixer, the rest of the ingredients.
  • Fold in well.
  • Grease a 9 x 13-inch cake pan and use wax paper on bottom of pan.
  • Flour sides of pan.
  • Pour cake into pan, then sprinkle 1 cup chopped nuts over unbaked cake.
