Ingredients
- 3 eggs
- 1 c. white sugar
- 2/3 c. pumpkin
- 1 tsp. lemon juice
- 3/4 c. flour
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
Method
- Beat eggs at high speed for 5 minutes.
- Gradually beat in sugar until blended well.
- Stir in, not using mixer, the rest of the ingredients.
- Fold in well.
- Grease a 9 x 13-inch cake pan and use wax paper on bottom of pan.
- Flour sides of pan.
- Pour cake into pan, then sprinkle 1 cup chopped nuts over unbaked cake.
