Ingredients

  • 3 eggs
  • 1 c. sugar
  • 2/3 c. pumpkin
  • 1 tsp. lemon juice
  • 3/4 c. flour
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. ginger
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt

Method

  • Beat eggs, sugar, pumpkin and lemon
  • juice on high speed for 5 minutes.
  • Then add flour and spices.
  • Beat slightly.
  • Spread into a 15 x 10 x 1-inch pan lined with wax paper.
  • Top with 1 cup finely chopped nuts (optional).
  • Bake at 350° for 15 minutes. Turn onto towel sprinkled with powdered sugar.
  • Starting at end, roll towel and cake together.
  • Leave until cool.
