Ingredients

  • 1 c. vegetable oil
  • 4 eggs, beaten
  • 2/3 c. water
  • 2 c. pumpkin
  • 1/2 c. raisins
  • 1/2 c. chopped pecans
  • 3 1/3 c. presifted flour
  • 1 1/2 tsp. salt
  • 1 tsp. nutmeg
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • 3 c. sugar

Method

  • Preheat oven to 350°.
  • Grease and flour 3 (8 1/2 x 9 1/2 x 2 1/2-inch) loaf pans.
  • Combine oil, eggs, water and pumpkin.
  • Sift together flour, salt, nutmeg, cinnamon, baking soda and sugar. Make a well in center of dry ingredients and add wet ingredients. Blend until moistened.
  • Stir in raisins and nuts.
  • Bake 1 hour. Let cook 1/2 hour before removing from pans.
