Ingredients

  • 1/2 c. shortening
  • 1 c. sugar
  • 2 eggs, beaten
  • 1 c. solid pack pumpkin
  • 2 c. sifted all-purpose flour
  • 4 tsp. baking powder
  • 1 tsp. salt
  • 2 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. ginger
  • 1 c. raisins (optional)
  • 1 c. nuts (optional)

Method

  • Cream the shortening; gradually add sugar.
  • Cream until light and fluffy.
  • Add eggs and pumpkin; mix well.
  • Sift flour, baking powder, salt and spices together.
  • Stir in dry ingredients and mix until blended.
  • Add raisins and nuts.
