- 1 c. pumpkin puree
- 1/2 tsp. vanilla
- 1 tsp. cinnamon
- 1 tsp. coriander
- 3/4 tsp. ground ginger
- 1/8 tsp. nutmeg
- 4 Tbsp. orange juice
- 12 oz. cream cheese, softened
- 1/2 c. sugar
- 3/4 c. sour cream
- 1 Tbsp. cornstarch
- 2 eggs (1 at a time)
- graham cracker crumbs
- sugar
- melted butter
Method
- Mix together first seven ingredients.
- Blend together cream cheese and 1/2 cup sugar.
- Add the sour cream, cornstarch and eggs to the cream cheese and sugar mixture, mixing well.
- Blend the pumpkin and spice mixture with the cream cheese and sour cream combination.
- Mix well. Pour in spring-form pan that is lined with graham cracker crumbs, sugar and melted butter mixture.
- Bake at 325° for 1 hour.
- Place water in a shallow pan in the oven as cake is cooking; this prevents it from cracking.
