Ingredients

  • 1 c. pumpkin puree
  • 1/2 tsp. vanilla
  • 1 tsp. cinnamon
  • 1 tsp. coriander
  • 3/4 tsp. ground ginger
  • 1/8 tsp. nutmeg
  • 4 Tbsp. orange juice
  • 12 oz. cream cheese, softened
  • 1/2 c. sugar
  • 3/4 c. sour cream
  • 1 Tbsp. cornstarch
  • 2 eggs (1 at a time)
  • graham cracker crumbs
  • sugar
  • melted butter

Method

  • Mix together first seven ingredients.
  • Blend together cream cheese and 1/2 cup sugar.
  • Add the sour cream, cornstarch and eggs to the cream cheese and sugar mixture, mixing well.
  • Blend the pumpkin and spice mixture with the cream cheese and sour cream combination.
  • Mix well. Pour in spring-form pan that is lined with graham cracker crumbs, sugar and melted butter mixture.
  • Bake at 325° for 1 hour.
  • Place water in a shallow pan in the oven as cake is cooking; this prevents it from cracking.
