Ingredients

  • 3 c. flour
  • 2 Tbsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 3 tsp. cinnamon
  • 2 c. sugar
  • 2 c. cooked pumpkin
  • 1 1/4 c. Crisco oil
  • 4 eggs, beaten
  • 1/2 c. chopped nuts

Method

  • Sift flour, baking powder, soda, salt and cinnamon together. Blend beaten eggs and sugar.
  • Add pumpkin and oil; blend well. Add flour mixture and nuts.
  • Make 1 large cake (tube or Bundt pan) or 2 loaf pans.
  • Bake at 350° about 60 minutes for large cake; about 50 minutes for loaf pans.
  • Frost if desired or pour glaze over top of warm cake.
