Ingredients
- 3 c. flour
- 2 Tbsp. baking powder
- 2 tsp. baking soda
- 1 tsp. salt
- 3 tsp. cinnamon
- 2 c. sugar
- 2 c. cooked pumpkin
- 1 1/4 c. Crisco oil
- 4 eggs, beaten
- 1/2 c. chopped nuts
Method
- Sift flour, baking powder, soda, salt and cinnamon together. Blend beaten eggs and sugar.
- Add pumpkin and oil; blend well. Add flour mixture and nuts.
- Make 1 large cake (tube or Bundt pan) or 2 loaf pans.
- Bake at 350° about 60 minutes for large cake; about 50 minutes for loaf pans.
- Frost if desired or pour glaze over top of warm cake.
