Ingredients
- 2/3 c. sugar
- 4 eggs
- 1 (16 oz.) can pumpkin
- 2/3 c. water
- 3 1/2 c. all-purpose flour
- 2 tsp. baking soda
- 1 1/2 tsp. salt
- 1/2 tsp. baking powder
- 1 tsp. cinnamon
- 1 tsp. cloves
- 2/3 c. coarsely chopped nuts
- 2/3 c. raisins
Method
- Heat oven to 350°.
- Grease bottom only of 2 loaf pans, 9 x 5 x 3-inch.
- Mix shortening and sugar in a bowl.
- Add eggs, pumpkin and water.
- Blend flour, baking soda, salt, baking powder, cloves and cinnamon.
- Stir in nuts and raisins.
- Pour into pans.
- Bake 1 hour or until toothpick comes out clean when stuck in middle.
- Cool completely before slicing.
