Ingredients

  • 2/3 c. sugar
  • 4 eggs
  • 1 (16 oz.) can pumpkin
  • 2/3 c. water
  • 3 1/2 c. all-purpose flour
  • 2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. cloves
  • 2/3 c. coarsely chopped nuts
  • 2/3 c. raisins

Method

  • Heat oven to 350°.
  • Grease bottom only of 2 loaf pans, 9 x 5 x 3-inch.
  • Mix shortening and sugar in a bowl.
  • Add eggs, pumpkin and water.
  • Blend flour, baking soda, salt, baking powder, cloves and cinnamon.
  • Stir in nuts and raisins.
  • Pour into pans.
  • Bake 1 hour or until toothpick comes out clean when stuck in middle.
  • Cool completely before slicing.
