Ingredients
- 3 1/2 c. sugar
- 1 large can pumpkin
- 1 c. Wesson oil
- 5 c. flour
- 1 c. chopped nuts
- 1/4 c. water
- 4 tsp. baking soda
- 1 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. pumpkin pie spice
- 1 tsp. vanilla
Method
- Mix sugar, pumpkin and oil, then beat well.
- Add flour, salt, spices and vanilla.
- Dissolve soda in 1/4 cup water.
- Add to mixture and blend well.
- Add nuts, if desired.
- Bake in loaf pans or juice cans to make round slices.
- Fill cans only 1/2 full. Bake at 350° for 40 to 60 minutes or until done.
