Ingredients

  • 3 1/2 c. sugar
  • 1 large can pumpkin
  • 1 c. Wesson oil
  • 5 c. flour
  • 1 c. chopped nuts
  • 1/4 c. water
  • 4 tsp. baking soda
  • 1 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. pumpkin pie spice
  • 1 tsp. vanilla

Method

  • Mix sugar, pumpkin and oil, then beat well.
  • Add flour, salt, spices and vanilla.
  • Dissolve soda in 1/4 cup water.
  • Add to mixture and blend well.
  • Add nuts, if desired.
  • Bake in loaf pans or juice cans to make round slices.
  • Fill cans only 1/2 full. Bake at 350° for 40 to 60 minutes or until done.
