Ingredients
- 3 1/2 c. sifted flour
- 2 tsp. baking soda
- 1 1/2 tsp. salt
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- 3 c. sugar
- 1 c. chopped pecans
- 2/3 c. water
- 4 eggs, beaten
- 1 1/2 c. canned pumpkin
- 1 1/2 c. oil
- candied fruit to taste
Method
- Mix dry ingredients; add nuts and fruit and mix well.
- Combine beaten eggs with pumpkin, oil and water.
- Pour into dry ingredients and blend until just mixed.
- Pour into 2 large greased and floured loaf pans to bake.
- Bake at 350° until loaves pull away from sides of pans.
- If batch is doubled, use a 29-ounce can of pumpkin and 1/4 cup more of flour.
