Ingredients

  • 3 1/2 c. sifted flour
  • 2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 1 tsp. nutmeg
  • 1 tsp. cinnamon
  • 3 c. sugar
  • 1 c. chopped pecans
  • 2/3 c. water
  • 4 eggs, beaten
  • 1 1/2 c. canned pumpkin
  • 1 1/2 c. oil
  • candied fruit to taste

Method

  • Mix dry ingredients; add nuts and fruit and mix well.
  • Combine beaten eggs with pumpkin, oil and water.
  • Pour into dry ingredients and blend until just mixed.
  • Pour into 2 large greased and floured loaf pans to bake.
  • Bake at 350° until loaves pull away from sides of pans.
  • If batch is doubled, use a 29-ounce can of pumpkin and 1/4 cup more of flour.
