- 2 cups Sugar
- 4 whole Eggs
- 2 cups Canned Pumpkin (not Pumpkin Pie Filling)
- 3/4 cups Cooking Oil Or Applesauce
- 2 cups Flour
- 2 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- 1 teaspoon Cinnamon
- 1 cup Chopped Nuts (optional)

- FROSTING
- 3 ounces, weight Cream Cheese
- 6 Tablespoons Butter
- 1 teaspoon Vanilla
- 1 Tablespoon Milk
- 3 cups Powdered Sugar
Method
- Bars:
- Mix eggs, sugar, pumpkin and oil (or applesauce) together. Sift flour, baking powder, baking soda and cinnamon. Add to the batter. Stir in nuts if using. Pour batter into a greased and floured jelly roll pan. Bake at 325 degrees for 25 minutes. When cool, frost.
- Frosting:
- Mix frosting ingredients together and beat until smooth. Spread on bars.
