Ingredients

  • 4 slices prosciutto
  • 4 rib eye steaks
  • 2 teaspoons olive oil
  • 1 tablespoon chives diced
  • potato salad mashed, to serve
  • mushrooms
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 1 pound mixed mushrooms thickly sliced
  • 2 cloves garlic crushed
  • 1/2 cup white wine
  • 2 teaspoons dijon mustard
  • 1/2 cup heavy cream

Method

  • Preheat grill on high. Wrap prosciutto around steaks, and brush with oil. Grill 3-4 minutes each side, until cooked to desired temperature. Rest, covered.
  • To make mushrooms, heat butter and oil together in a large frying pan on high. Add mushrooms and cook, stirring, 3-4 minutes, until they begin to soften. Add garlic and cook 1 minute more. Blend in wine and mustard. Cook, stirring, until reduced by half. Pour in cream. Bring to a boil, stirring. Simmer 3-4 minutes, until thickened slightly. Season to taste.
  • To serve, spoon creamy mushrooms over steak. Sprinkle with chives. Accompany with mashed potato and salad.
