Ingredients

  • 2 1/4 pounds potatoes scrubbed and cut into wedges
  • 3 tablespoons olive oil
  • 4 tablespoons mayonnaise
  • 1 clove garlic crushed
  • 1 tablespoon dijon mustard
  • white pepper to taste

Method

  • Preheat the oven to 350°F. Place the potato wedges on a large baking sheet and season with salt and freshly ground black pepper. Drizzle with the olive oil and toss well to coat. Bake for 30-35 mins, turning occasionally.
  • For the aioli, place the mayonnaise in a bowl with the garlic and mustard and mix well. Season to taste with salt and white pepper. Serve with the potato wedges.
