Ingredients
- 6 c. diced potatoes
- 1/2 c. sliced carrots
- 6 slices bacon
- 1 c. chopped onion
- 1 c. diced celery
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 c. half and half
- 2 c. milk
- shredded cheese
- parsley
Method
- Cook potatoes and carrots until tender in small amount of water.
- Fry bacon until crisp and crumble.
- Save 2 tablespoons bacon fat and saute onion and celery.
- Combine onion, celery, salt, pepper and crumbled bacon.
- Add to potatoes.
- Add half and half and milk.
- Simmer 30 minutes.
- Sprinkle cheese and parsley on before serving.
