Ingredients

  • 6 c. diced potatoes
  • 1/2 c. sliced carrots
  • 6 slices bacon
  • 1 c. chopped onion
  • 1 c. diced celery
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 c. half and half
  • 2 c. milk
  • shredded cheese
  • parsley

Method

  • Cook potatoes and carrots until tender in small amount of water.
  • Fry bacon until crisp and crumble.
  • Save 2 tablespoons bacon fat and saute onion and celery.
  • Combine onion, celery, salt, pepper and crumbled bacon.
  • Add to potatoes.
  • Add half and half and milk.
  • Simmer 30 minutes.
  • Sprinkle cheese and parsley on before serving.
