Ingredients

  • 8 to 10 large potatoes
  • 1 large onion, diced
  • 2 Tbsp. parsley
  • water
  • 1/2 stick butter
  • milk
  • salt and pepper

Method

  • Peel and cut up potatoes.
  • Cook with parsley and onion until vegetables are tender.
  • Drain off water.
  • Add milk and 1/2 stick of butter.
  • Salt and pepper to taste.
  • (Amount of milk added depends on desired consistency of soup.)
  • Simmer 30 minutes or so to heat thoroughly and blend flavors.
  • Serve with crackers and sliced Cheddar cheese.
