Ingredients
- 8 to 10 large potatoes
- 1 large onion, diced
- 2 Tbsp. parsley
- water
- 1/2 stick butter
- milk
- salt and pepper
Method
- Peel and cut up potatoes.
- Cook with parsley and onion until vegetables are tender.
- Drain off water.
- Add milk and 1/2 stick of butter.
- Salt and pepper to taste.
- (Amount of milk added depends on desired consistency of soup.)
- Simmer 30 minutes or so to heat thoroughly and blend flavors.
- Serve with crackers and sliced Cheddar cheese.
