Ingredients

  • 5 lb. potatoes
  • salt and pepper to taste
  • 1 onion, chopped
  • 2 small jars chopped pimento
  • 1 tsp. or more mustard (if desired)
  • 3 or more Tbsp. mayonnaise
  • 1/2 stick margarine
  • 3 boiled eggs, chopped
  • 3 Tbsp. cubed sweet pickles and juice

Method

  • Peel, wash and dice potatoes.
  • Boil until tender, about 30 minutes; drain.
  • Add margarine, salt and pepper to hot potatoes. Mix in a bowl the eggs, onion, pickles and juice, pimento, mustard and mayonnaise.
  • (This can be mixed an hour or so ahead of time and refrigerated.)
  • Add mixture to potatoes while they are hot or very warm; mix gently.
