Ingredients
- 5 lb. potatoes
- salt and pepper to taste
- 1 onion, chopped
- 2 small jars chopped pimento
- 1 tsp. or more mustard (if desired)
- 3 or more Tbsp. mayonnaise
- 1/2 stick margarine
- 3 boiled eggs, chopped
- 3 Tbsp. cubed sweet pickles and juice
Method
- Peel, wash and dice potatoes.
- Boil until tender, about 30 minutes; drain.
- Add margarine, salt and pepper to hot potatoes. Mix in a bowl the eggs, onion, pickles and juice, pimento, mustard and mayonnaise.
- (This can be mixed an hour or so ahead of time and refrigerated.)
- Add mixture to potatoes while they are hot or very warm; mix gently.
