Ingredients
- 2 beaten eggs
- 2 c. milk
- 1 Tbsp. melted shortening
- 2 c. flour
- 1 tsp. salt
- 1 Tbsp. baking powder
- 1 tsp. sugar
- 2 c. grated raw potatoes
- 1 medium sized onion, minced
Method
- Combine eggs, milk and shortening.
- Sift flour with salt, baking powder and sugar; add to egg mixture and beat smooth.
- Add potatoes and onion and blend well.
- Bake on a hot griddle.
- Makes 12 to 15 pancakes.
