- mashed potatoes (made from 4 cooked potatoes)
- 1/2 c. grated Cheddar cheese
- 1 tsp. salt
- 1/8 tsp. ground pepper
- 1/4 tsp. nutmeg
- 1 egg yolk, lightly beaten
- 1 egg white
- 1 c. fine dry bread crumbs (Italian style)
- 1/4 c. grated Parmesan cheese
- 1 1/2 to 2 qt. vegetable oil
Method
- Combine the potatoes with the Cheddar cheese, salt, pepper and nutmeg.
- Taste for seasoning and blend in the egg yolk.
- Beat the egg white lightly in a shallow bowl.
- Combine the bread crumbs and Romano cheese in a second bowl.
- Shape spoonfuls of the mashed potatoes into 20 even-sized balls and flatten each one slightly. Dip each croquette into the beaten egg white and then into the cheese-crumb mixture, being sure to coat each one evenly.
