Ingredients

  • mashed potatoes (made from 4 cooked potatoes)
  • 1/2 c. grated Cheddar cheese
  • 1 tsp. salt
  • 1/8 tsp. ground pepper
  • 1/4 tsp. nutmeg
  • 1 egg yolk, lightly beaten
  • 1 egg white
  • 1 c. fine dry bread crumbs (Italian style)
  • 1/4 c. grated Parmesan cheese
  • 1 1/2 to 2 qt. vegetable oil

Method

  • Combine the potatoes with the Cheddar cheese, salt, pepper and nutmeg.
  • Taste for seasoning and blend in the egg yolk.
  • Beat the egg white lightly in a shallow bowl.
  • Combine the bread crumbs and Romano cheese in a second bowl.
  • Shape spoonfuls of the mashed potatoes into 20 even-sized balls and flatten each one slightly. Dip each croquette into the beaten egg white and then into the cheese-crumb mixture, being sure to coat each one evenly.
